“The being of a cook is the happiness reflected on the face of the other.”
Chef Paco Pérez, hailing from Llançà, began his culinary journey at age 12 in his family's tapas bar. His Mediterranean roots were enriched by the influences of French Nouvelle cuisine and what El Bulli and Ferran Adrià later represented, with whom they shared territory. With a total of five Michelin stars, Paco now leads Miramar (2010), Enoteca (2010), and Arco (2024).
Paco Pérez works with the goal of winning the complicity of his customers on a daily basis, thanks to a unique and innovative concept described as the freshness of the sea and the essence of ingredients.

MIRAMAR
Paco Pérez, along with his wife Montse Serra, runs Miramar, a renowned restaurant in Llanca, a small fishing town on the Costa Brava near the Spain-France border. Originally a family seaside hostel, Miramar has evolved into a symbol of avant-garde Mediterranean gastronomy under Paco's creative leadership. The restaurant focuses on local, high-quality ingredients, particularly from the sea, to create innovative dishes that blend tradition with modern techniques.
Located at Cap de Creus, Miramar offers stunning sea views and has become a pilgrimage site for gourmets worldwide, earning two Michelin stars and three Repsol suns.
Enoteca’s kitchen, led by Paco Pérez, captures the essence of the Mediterranean with a commitment to local, fresh ingredients from farmers, ranchers, and fishermen, blended with international flavors like South American lula and Rias Baixas shrimp. At the Hotel Arts in Barcelona, this two-star Michelin experience reflects a deep-rooted passion for innovation, collaboration, and the purity of each ingredient.
